Baked Mac and Cheese

Sauce
Butter/Unsalted 60g
Cheese/Gruyere/French 200g Grated
Cheese/Mozzarella/Ball/low water content 100g Grated
Flour/All Purpose 50g
Milk/Whole 750ml
Salt/Kosher 3/4 tsp
Topping
Breadcrumb/Panko 40g
Butter/Unsalted 30g Melted
Salt/Kosher pinch

Directions

Sauce

  1. Melt butter, add flour, cook and stirring constantly for 1 minute
  2. Add milk ~1 cup at a time
  3. Whisk until lump free
  4. Thicken until sauce coats back of wooden spoon
  5. Remove from stove, add cheese and stir

Topping

  1. Mix butter, breadcrumbs & salt

Assembly

  1. Cook pasta minus 1min
  2. Toss in butter
  3. Stir together pasta and sauce
  4. Sprinkle with topping
  5. Bake for 25 minutes
