Banana Muffins

Baking Powder 1 teaspsoon
Baking Soda 1 teaspoon
Banana 1 1/2 cups very ripe, mashed
Butter/Unsalted 85g melted
Chocolate/Chips 1 cup
Cinnamon/Ground 1 teaspoon
Egg 1 room temperature
Flour/All Purpose 190g
Milk/Whole 2 tablespoons
Nutmeg/Ground 1/4 teaspoon
Salt/Kosher 1/2 teaspoon
Sugar/Brown 135g
Vanilla/Pure Extract 1 teaspoon

Directions

Preparation

  1. Preheat oven to 220C
  2. Mash bananas
  3. Melt butter

Muffins

  1. Preheat oven to 220C
  2. Use cupcake lines in Muffin Tray
  3. Whisk, together [Flour, Baking Powder, Baking Soda, Salt, Cinnamon, Nutmeg], set aside
  4. In stand mixer, beat [Banana, Sugar, Egg, Vanilla, Milk], slowly add Butter
  5. Mix dry ingredients with wet until combined
  6. Fold through chocolate chips
  7. Spoon batter into liners
  8. Bake for 5 minutes at 220C
  9. Reduce to 180C and bake for an additional 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool for 5 minutes
  11. Transfer to wire rack, until room temperature
