Chicken Gyros

Chicken/Thigh/Skinless/Boneless 4
Garlic 2 cloves crushed
Lemon 2 Juice & Zest, Other serve as wedges
Oil/Olive 2 tablespoons
Spices
Cinnamon/Ground 1/4 teaspoon
Coriander/Ground 1/2 teaspoon
Cumin/Ground 1/2 teaspoon
Mint/Dried 1/2 teaspoon
Oregano/Dried 1 teaspoon
Paprika/Sweet/Ground 1/2 teaspoon
Pepper/Black None Fresh cracked
Salt 1 teaspoon

Directions

  1. Add Chicken, ingredients & spices
  2. Mix well, ensuring each thigh is well coated
  3. Cover and chill for at least 3 hours, upto 48 hours
  4. Heat grill to highest
  5. Place marinated chicken on skewers
  6. Grill for 15 - 20 minutes while continuing to baste with oil, juices and marinade
  7. Rest for 5 minutes
