Directions
- Preheat over to 180C
- Whisk eggs, milk, salt & pepper
- Heat oil in skillet over medium heat
- Add bacon, cook until almost golden
- Add garlic, cook for ~ 30 seconds
- Add spinach, toss until just wilted (Bacon should be golden)
- Heat to medium, remove 1/3 bacon,spinach mixture
- Add butter
- Pour in 2/4 of egg mixture
- Scatter half of cheese over eggs
- Pour remaining egg mixure over
- Scatter reserved bacon, spinach and remain cheese
- Cook for ~ 3 minutes until sides are set but not golden
- Transfer to oven, cook for 8 minutes / until the center is just set and the cheese has melted
- Rest for a few minutes then slice and serve.
