Frittata

amount preparation
Bacon 300g Chopped
Butter/Unsalted 15g
Cheese/Mozzarella 150g Shredded
Egg 10
Garlic 2 cloves minced
Milk/Whole 2 tablespoon
Oil/Canola 1 teaspoon
Pepper 1/2 teaspoon
Salt 1/2 teaspoon
Spinach 2 big handfuls

Directions

  1. Preheat over to 180C
  2. Whisk eggs, milk, salt & pepper
  3. Heat oil in skillet over medium heat
  4. Add bacon, cook until almost golden
  5. Add garlic, cook for ~ 30 seconds
  6. Add spinach, toss until just wilted (Bacon should be golden)
  7. Heat to medium, remove 1/3 bacon,spinach mixture
  8. Add butter
  9. Pour in 2/4 of egg mixture
  10. Scatter half of cheese over eggs
  11. Pour remaining egg mixure over
  12. Scatter reserved bacon, spinach and remain cheese
  13. Cook for ~ 3 minutes until sides are set but not golden
  14. Transfer to oven, cook for 8 minutes / until the center is just set and the cheese has melted
  15. Rest for a few minutes then slice and serve.
