German-Style Potato Salad

Directions
- Cook potatoes in boiling salted water for ~15minutes. cook slightly
- Slice potatoes and layer into serving dish
- Heat oil in frying pan over medium heat
- Cook bacon until golden
- Transfer bacon to paper towel-lined plate to drain
- Add onion to pan and cook until soft.
- Add [vinegar, water, mustard, honey, salt]
- Bring to boil, then reduce to low and simmer for ~5minutes until mixture is reduced by half
