German-Style Potato Salad

amount preparation
Bacon/Middle 250g fat trimmed, chopped
Dill 1/4 cup roughly chopped
Honey 2 teaspoon
Mustard/Dijon 1 tablespoon
Oil/Olive/Extra Virgin 1 tablespoon
Onion/Brown 1 finely chopped
Potato/Desiree 1kg
Salt/Sea 1 teaspoon
Vinegar/Apple Cider 1/3 cup
Water 1/3 cup

Directions

  1. Cook potatoes in boiling salted water for ~15minutes. cook slightly
  2. Slice potatoes and layer into serving dish
  3. Heat oil in frying pan over medium heat
  4. Cook bacon until golden
  5. Transfer bacon to paper towel-lined plate to drain
  6. Add onion to pan and cook until soft.
  7. Add [vinegar, water, mustard, honey, salt]
  8. Bring to boil, then reduce to low and simmer for ~5minutes until mixture is reduced by half
