Directions
- Brink milk & water to boil over medium-high heat in a medium saucepan
- Reduce heat to medium
- Whisking constantly, gradually add polenta
- Bring to simmer
- Reduce heat to low, cover pan & cook.
- Whisking every ~5minutes
- Once thickened & no longer gritty (30-35min) remove from heat
- Add butter, cheese & salt
- Whisk until consistency of porridge (~1min)
Notes
- Polenta can be made 3 hours ahead. Store covered at room temperature. Reheat over medium-low, adding milk as needed to loosen
- pay attention to cooking times in future
- This makes atleast four servings, 1/2 cup polenta for 2 people preferred This does impact cooking time (faster)
