Tzatziki

Cucumber/Lebanese 2 seeds removed, grated, juice squeezed out
Garlic 1/2 clove minced
Lemon/Juice 1 tablespoon
Oil/Olive/Extra Virgin 1 tablespoon
Pepper/Black
Salt 1/2 teaspoon
Vinegar/White/Wine 2 teaspoon
Yoghurt/Greek/Thick 300g

Directions

  1. Cut cucumber in half lengthwise, scrape watery seeds out
  2. Coarsely grate cucumber
  3. Wrap in towel, squeeze to remove excess liquid
  4. Add cucumber and remaining ingredients then mix to combine
  5. Let rest for atleast 20 minutes
